"I was invited to a precious table and made my first visit. Apparently, I heard that you'll be completely full, so I skipped lunch and went for it.
The dishes were brought out, and the first thing I thought was that the portions were huge! The flavors were layered with the umami of various ingredients, creating a harmonious blend. The moderate richness made me crave wine. It truly evoked the feeling of a genuine bistro.
The freshly sliced ham had a raw texture, and the sweetness of the melon and the saltiness of the ham were a perfect match. I could have eaten it forever.
The famous charcuterie, enjoyed with bread, was so satisfying that it alone could have filled me up. The spices were well-balanced, and even the strong flavors of liver and blood were elevated to a level of deliciousness.
The confit of Ayu (sweetfish) was crispy on the outside and tender on the inside. I could eat the whole thing. The saltiness and the aroma of olive oil made me crave wine.
The roasted duck breast had incredibly fragrant and delicious duck fat. The vegetables were pan-fried in this fat, making them incredibly flavorful. It was a simple yet satisfying dish in terms of both taste and quantity.
And even the final dessert was incredibly delicious... The peach compote perfectly brought out the sweetness of the peach, and the blancmange added richness and smoothness, creating a rich yet refreshing dessert. The level of perfection was off the charts...
